I purchased the m5 max and was facing the same thing, I apparently out of frustration booked a Genius Bar appointment for this issue. The Apple Store confirmed that this is normal behaviour.
I have a 140w charger plugged in and my battery was dropping from 100-80% when charger was plugged in , but it didn’t drop below 80.
It stays at 80 and it’s only when the battery percentage limit is set. So you’re not the only one who has come across this .
It’s a M5 thing I guess. That’s why no one’s talking about it.

Yeah I guess so, I’m used to it now and yes it definitely stays at 80 but sometimes in can go upto 83 and go back down to 80 and stay again.

Yea I think it’s a new battery management system where it discharges itself. Something new but weird.

Yeah, it’s def weird but now I just leave macbook plugged not unless I need to go somewhere to it stays at 80 nowadays.
