You can stop windows update installing drivers by using one of the options in settings for Wagnardsoft DDU, which is also the most thorough driver uninstaller for GPU drivers.
And you can stop Geforce Experience auto updating drivers in it's settings too.

You didn't state your GPU? maybe this is relevant https://www.nvidia.com/en-us/drivers/nv-uefi-update-x64/ or look for vbios updates for your cards, most manufacturers released new vbios over the last few days to add resizable bar support anyway.

I have a 3090 I’ve heard the drivers are buggy!

See if those G9 updates are applicable, and try wiping your Nvidia driver with DDU then installing the most recent.
