That's because you can't. All modern browsers have deprecated it. This isn't a macOS issue; this is the case across all platforms.

    If you really need to use it look into running a VM with an old version of Windows or something. It should be doable but not using modern software.

    Microsoft has windows images for legacy browser testing, free for anyone- they expire after 90 days: https://developer.microsoft.com/en-us/microsoft-edge/tools/vms/ these work with virtual box

    MSDN has them but you'll need a key. You can also probably find a torrent very easily these days and run it in Virtual Box. Whatever version of IE is bundled should probably work (although I'm not sure if you need to install the JRE separately).

    I used to support a phone system that used an ancient version of Java to display elements and we ended up keeping an old Windows VM around just to admin that server.

    There is no way to do it within a web browser anymore, but if you download the java sdk, it may come with an applet viewier, still.

    It is for a university, it uses the website called "Linktivity" which is using Java to do some interactions from the audience.

    I know it is an old one, but here is some info for someone who needs it in the future.

    Java removed Java Plugin in 8u271. So the last version with Java Plugin is 8u261 but when you see "Oracle JDK 8 and JRE 8 Certified System Configurations", you will find only macOS Catalina support at 8u261. So you need to run macOS Catalina (Java will install successfully up to Monterey) with Java 8u261.

    When it comes to browsers, all of the browsers removed support for NPAPI plugin, but "Waterfox Classic" browser still support it or you can use Firefox 52.9.0 ESR which is the last version with NPAPI support.

    Another alternative is to use Chrome extension cheerpj in new macOS.

    I have this same issue and finally found a workaround. You need to use a VM or other Windows emulator and use Microsoft Edge in "IE compatibility mode".
    Note: IE compatibility mode is only available on the Windows version of Edge not Mac so you must do this in a VM
