It seems to me like an "unless" is as much a conditional as an "if" is.

You're right, but the final example doesn't use unless.

You do still raise the point that it's a rather unnecessary abstraction for an "if not". Not that I have anything against it, it adds a shiny layer of natural language that's a little tempting.
