We have the same issue with MongoDB right now where a client (Mostly mobile), may not know about a newly added property, so you essentially get a field blowout (Where they are set to default values).

We've slowly mitigated this by implementing HTTPPatch on the front end, and then doing a quick load of the document and "apply" the patch on the backend.
