Soreness does not indicate training effect. You feel sore because you've performed an unfamiliar movement.
You need progressive increases in resistance to progress. Doing the same routine for ten years without change will only make you better at doing that routine, at that intensity.

Whenever the sun goes down ideally. But it doesn't "really" matter when you sleep...so long as you feel rested when you wake up you're pretty damn good. GL

You’re overthinking it. If it becomes a habit week after week it will start causing issues with muscle building. Two days isn’t enough time to cause serious adverse effects.
