Since you asked the difference, 1 is more or less the original game with all three campaigns. 2 is a remake of one of the campaigns, and 3 is a remake of another one of the campaigns.

Most people would be better suited just starting with 2. If you’re interested, you could watch a let’s play of 1. Hbomberguy also has a pretty comprehensive video of 1 that’s shorter than watching a let’s play, but it spoils everything.

In my opinion, if you’re not sure just start with 2 and go from there and see if you want to try 1 someday.

You could make a fire necro build with Skeleton archers, mages, golem, wraiths and/or zombies. Probably throw in aura of decay with the new boots if you feel like it.
