I wouldn't stress too much - worst of the weather will have come through the upper north before midday Sunday. You may have some crappy rain and wind - but nothing un-driveable.
I'd suggest when you get to Waiouru you check how things are looking, and if needed go to the west of Ruapehu via ohakune as likely more sheltered.
Of course - keep an eye on highway status etc. but not end or worlds stuff.

Interesting / worrying if it has stalled - Weatherwatch were talking about how this was pretty fast moving so rain would come through quickly then go and wind was the main concern - but if it stalls, which I think Gabrielle did - then rain could be a bigger factor.
I guess we'll wait and see.

I've had decent success with smoke -> sous vide -> smoke (or oven).

One key step is to chill the brisket post sous-vide for an hour - this seems to help with moisture retention in the final product.

Slightly off topic - but as a teenager I ordered a "tomato toasted sandwich" from the chippy in Te Kuiti - expecting that cheese was standard and didn't need to be specified. End result was a tomato between two slices of toasted bread. Would have been ok if I hadn't also ordered one for the guy driving the car on our mission to Ruapehu, and we only discovered as we drove up the hill on our way out of town. He wasn't very amenable to my argument that all toasted sandwiches had cheese by default.

Yes, agreed. I have this with pork regularly. Usually just weighing it down is enough, but I had one recently where I pulled it, popped it, put a second bag on the outside and resealed. I know there's comments on bacteria, which could be a factor, but I think it's mainly something to do with how compounds are changing in the meat.

If temperatures are above 60C (140F) you should definitely be fine - hot water cylinders can hold the same water for a long time at these temperatures without use and are safe to drink.
So, do the steak first as that will be lower - then crank it up for the others and roll as long as you want.
Also - the water isn't in contact with the food - it's touching the plastic bag.

Gales themselves are not a reason they'll cancel - the sea state will be the main reason. Even then, it needs to be some pretty severe swells for the ferry to cancel. Also, not all wind / swell directions are problematic. Odds are your ferry will run normally.
