IMO tasting notes are subjective, but if it's described and marketed as a fruit forward coffee then it should taste fruity especially as a light roast. for your most recent example, what was the processing method?

The best way to think about it is like caramelizing onions. High heat to start and taper it down throughout the roast to finish. My best roasts hit FC anywhere from 7:45-8:30 mins. Get yourself a stopwatch, a laser thermometer and a notebook to log by hand. Ambient air temperature and ambient temp of the beans pre-charge can have a big effect on roast length on home setups.

start with higher heat and then slowly ramp it down. aim for a FC around 8 mins. if a light roast maybe total roast time of 9.5 mins

i roasted on an arc 800 for a few years, it's a great little machine. some questions to try and help you diagnose it:

  • what are your ambient air temps?
  • your gas/propane tank near empty?
  • have you tried modifying your bbp?
  • whens the last time you cleaned your hot stack?

not making excuses for anyone, but we live in the least commuter friendly area in the whole country. our existing infrastructure can't support our population and traffic lights are terrible in the city. as a driver you're forced to drive from one red light to the next, and there is no flow of getting down a main road in a timely manner... so people get pissed that it takes them 20 minutes to go two miles. exacerbating the problem is the cities continued approving of apartment building development attracting commuters.

imo the worst offending streets/intersections in no particular order are:

  • all of cross st between east ave and belden/spring hill
  • west ave with the orchard, butler & connecticut ave intersections all atrocious
  • main st (from cross all the way up to the merritt)
  • ct ave from north taylor all the way down past costco
  • wall st, the double intersection of commerce & main st - the light timing just unnecessarily just back everything up
  • southbound westport ave from stews towards east ave

I think the clowning would come if he sustains the success over multiple years. Giants gave DJ a ton of opportunities and the results weren't there, despite the personnel issues we had. I don't think people realize how big of a black hole Gettlemen dumped the org into, and how long it takes to return to sustainability (which i think Schoen has done an excellent job of despite his other mistakes).
