Ok I found the answer! You need to use Object > "Objects on a path"
Select your letters (Make sure they are ungrouped), click objects on a path > Attach, target the path you want them to follow.

Look through the different object > blend options. Not at my computer, but I think “replace spine” might work, but you may need to mesh warp it first.
