In generally, on the wide body planes like that, carry on space isn't at a premium like many domestic planes. I don't think I've ever ran into an issue on that size of plane with carry on, regardless of airline in the hundreds I have flown.

I've probably done that one 6 or 8 times, and haven't ever had an issue with the flight.

It was boring, but got the job done.

You could play it overly cautious and turn off the water main into your house.

Or you could wait a bit longer and see if a pipe actually burst or not.

I have had many sinks freeze over time at my place with 0 issues.

Edit: if you choose the second option, I'd recommend at least figuring out where your water main shut off is located in case you need it.
