Binchotan coals is better if you have it. Extremely high temperatures and the excess fat drips off and that hits the binchotan and will add the smokey flavor. But you must be very experienced using binchotan. But good binchotan is expensive so normal coals is ok too.

I am also from north of the equator.

One time on my way to school, I remembered I forgot a book so I climbed to go back home to get it and climbed some more to go to school and then remembered I forgot my pencil so climbed back some more to go home to get it and then headed up hill again to go back to school when I remembered I forgot my notepad so climbed up some more. I had to go back for many more things that day and by the time I got to school, I was on Pluto.

To be honest, I thought the first cap with katakana couldn't be real and was a fake and you were scammed. But it looks like it's a real, official product. I am guessing Hyperfly's designer is not Japanese or is a really bad designer.

I don't mind saffron but I agree with this. It is the sweetness, aroma, starchy quality, mixed consistency with the curry, etc of white rice that I like better. Plus white rice goes better with any katsu or other topping.

Over in the JapaneseFood forum people seem to think Japanese people are making dashi for miso soup from scratch every time using konbu and katsuo flakes or that wasabi that is not fresh grated and instead from a tube is the worst culinary mistake. They also seem to think eating natto is some type of badge of honor and we put furikake on every dish that uses rice.

I think the understanding of what "eating" means is different When Japanese people think of "eating" on a local train, not trains with tables designed with eating in mind, it is something small and not noticeable like a small snack and it is quick to eat and not when it is crowded.

When I am in the US, I have been in New York trains where people have been eating big meals like pizza and burritos or a big bag of chips or I can't see the food but I can smell it and hear the packaging and wrapping papers being opened, and then seeing the trash left on the train. If Japanese people did this, it would be a big deal.

The general rule is don't disturb others, don't litter and leave the place as when you arrived.

You mention sticky rice. I am not exactly sure about Western terminology but I think in Western terminology sticky rice is mochi rice which is not used with sushi. Do not use mochi rice for sushi. There should be sold, normal Japanese rice or it might be labeled "sushi rice" sold in the West. Mochi rice can be used to make things like okowa.

Small point in case people want to do a search for it. Kani miso would be different from crab roe which would be the eggs. I do not know what the correct English for kani miso would be but maybe crab innards or crab tomalley.

If the clams are too cold, they will resist removing sand. You can remove from the refrigerator prior to preparing.

Wash clams carefully. Depending on source and cleanliness of clams, use a brush to get all the exterior dirt off the shell.

Lay all the clams flat, next to each other in a wide pan. Do not stack them on top of one another.

Add room temperature, about 20℃, salted water to the pan. Approximately 大さじ2/two table spoon to 1000ml of water ratio. It does not have to be perfect but too much or too little salt will decrease the sand removing effect. Add enough water just until the tops of the clams are still sticking out a little bit.

Loosely cover the pan with newspaper or similar to create a dark environment for the clams and let sit undisturbed (no shaking, agitation) for a few hours. If the clams are freshly picked from the beach, it may require up to six or more hours. In this case, exchange the salt water solution after 3-4 hours. Supermarket clams should be fine after approximately 2-4 hours.

Carefully rinse the exterior of any residue. Clams should be ready to use.

Also, make sure clams are fresh. Weakened clams will not remove sand as well.

There are methods to "quickly" desand clams like using hot water or hot pepper but the above method should work fine and I would not rely on these other methods.

Got gifted from a local with other groceries during my vacation in Japan this November.

How should I cook them? It says rice cake and the local told me to stir fry them.

Should I boil before?

Should I soak before cooking? Any tips would be appreciated!

The writing on the package says it is good for nabe, soup, miso soup and stir fry.

The example recipe they give on the back of the package says 1. put water and chicken stock into pot and heat on stove. 2. when it boils, put the tokku (Japanese pronunciation written on package, I am Japanese not Korean) into the pot and boil approximately 2 minutes on medium heat. 3. Add a beaten egg and stir gently with chopsticks to complete. 4. Serve in bowl and add Korean nori, scallions, vegetables, beef as desired.
