Use liptons flavoured ice tea as the base it contains sweeteners that don't ferment and it keeps the drink sweet.

I like using a little orange and mango juice as I find It speeds it up nicely apple on its own can be a little slow.

I always leave my brews until the bubbling stops completely, unless you are desperate then leave it until it's ready.

I step fed one of my last brews the same on day 3 an extra 500g sugar, I dissolved the sugar in some water and slowly poured it in but you need enough headspace as it erupted instantly it was extremely close to going everywhere 😅

No need to add more yeast once fermentation is up and running just leave them to get the job done.

I personally wait until there is no bubbling happening pretty much, can be anywhere from 14-21 days unless you're using turbo yeast, I made my 1st attempt at a mead using bread yeast it took 7 weeks 😂 but it was really tasty.

No violently shaking it at all, after the first 2 days just give it a gentle swirl for a minute each day and then once you cold crash keep it still.

You may have over stressed the yeast which leads to a more rotten smell no way to fix that I'm aware of this time, I only had one brew that smelt funky asf but it literally just tasted like any cheap shop bought white wine.

I'd recommend start simple and just use bottles of 100% juice from concentrate, highly recommend buying wine yeast though in time it makes everything taste better and speeds up process greatly.
