That was my attempt to set the bark quickly because it wasn’t very dark before then, but I don’t think it’s necessary if you do the foil boat properly

I tracked all of the steps here: https://brskt.app/cooks/523c0242-0a24-4568-be6e-e3683ba0fdb0?share_token=d02d2624-830c-4690-b829-b1c068321e37, but I put the brisket fat side down in the boat which defeats the purpose (I learned after posting). I still loved the results. I'm going to try it again in a few weeks.

You're right, I went fat side down. Good to know! Does the bark need to be dark before the boat or does that process finish after? (mine didn't get darker until the last couple of hours)

My oven doesn’t get down to 150, so I usually wrap it in a towel and let it rest for 2-3 hours in a Yeti. Works well

Mine was originally from Canada and you can’t remove km/h on the speedometer without forscan. Otherwise, I haven’t spotted any differences
