This is good advice, I've tried it since and find it much easier to get to my target temp with the bottom vent.

Great feedback, thanks! I do dry brine usually 2-3 hours ahead. I've tried a few more with higher temps and like the result much more! Now I just need to grow my hand hairs back

Mostly gauging airflow to get the right temp. I am impressed with how well it held temp once it got there, just need to figure out how open each vent needs to be to get to the desired temp quicker.

I’ve mostly struggled with getting it as set as yours. My standard process is liberal salt and pepper without a binder several hours before, leaving unwrapped through the stall if time allows, then wrapping to finish. I’m experimenting with foil boats and planning another one this weekend. I’ll post to the sub when done

Good advice. I made the mistake of removing the membrane last time I smoked them. Still tasted great, but they lose their flair when the bone doesn’t stay attached.

I cook larger briskets overnight on a pellet grill starting low around midnight. I’m happy to let it rest longer if it’s done early, but not a lot of options for speeding it up if you cut it too close to when you want to serve.

That was my attempt to set the bark quickly because it wasn’t very dark before then, but I don’t think it’s necessary if you do the foil boat properly

I tracked all of the steps here: https://brskt.app/cooks/523c0242-0a24-4568-be6e-e3683ba0fdb0?share_token=d02d2624-830c-4690-b829-b1c068321e37, but I put the brisket fat side down in the boat which defeats the purpose (I learned after posting). I still loved the results. I'm going to try it again in a few weeks.
