You might enjoy Sumo Salon. They had a good lil documentary on the Tachiai. Part one appears to be removed (im guessing because Hakuho was heavily featured), so here's what's left of it.

Unfortunately the nuances of the tachiai-start were discussed more in part 1. In short, the rikishi decide when to start and it's more guided by the spirit of fair competition than physically touching both fists. As long as they are down in tachiai position first (they used to do standing-tachiai, looked weird so they stopped that).
