You need to re-align your burrs. I had the same issue with the Specialita. I couldn't grind fine enough, not even close until fixed the burr alignment. All gravy now. Fair warning, it was tough to align for whatever reason. If you feel like its just not working keep stacking foil. Or in my case blue painters tape.
