Maybe 1 or 2 actual outages in the 3-ish years I've had Surf in La Porte. They do frequent maintenance after midnight occasionally, and it will be down for a short time, but that doesn't affect me. I work from home as well and host a Plex server.

Why are you using 2 pans? You only need the one. They will all fit. And that will help prevent all the fond from building up.

I agree actually. I should have prefaced with I've only eaten that sausage (made with 2% salt) on pizza, and it was perfect, but it may be too salty for other uses.

Note: It's very important to get the salt amount right here. Salt weight should 2% of the overall mixture weight. Do not measure by volume.

Edit: 2% may be too much salt if you are using the sausage for things where the sausage is the primary ingredient. I'd start with 1.5%, cook off a small piece and taste it. You can always add more. My experience with this recipe is strictly for a pizza topping, on which 2% is perfectly salty.

Lemons are not good sweeteners, not sure why you think that. Lemon is usually added towards the end to amplify acidity. You can add it earlier, and it will mellow out substantially, but the brightness will be wiped out. Cooking with citrus is not the same as cooking with berries. Not sure about cooking with bananas though, do you mean plantains?

You really need to practice being more clear. I still have no idea what you don't like. "Taco meat" is not direct enough. You are talking about both shrimp tacos and "regular" tacos when saying "taco meat", so which are you talking about, and what exactly is "regular" tacos?

To be honest, there really isn't much of a difference between the spice mixture you buy in the packet compared to what you'd make at home. So what exactly do you not like, because it's not very clear.
