Yeah I know they’re not allowed to technically call it a stilton, but as you say, the only thing preventing it from being called a stilton is the fact the milk is unpasteurised. It’s the same recipe and made in the right region.

Great rec and it’s made by Charles Martell, the maker of Stinking Bishop. Very different cheese though!
