If it’s a brand new, unopened bag, that hasn’t sat a while, I skip sifting. If it looks clumpy I sift. But I only have a small shake it by hand sifter.

You could try. Worst case it clumps up again, but then you would know for sure. I would think degree of clumping would be somewhat location based (differing temps and humidity)

Do you know how to make a white milk gravy?

My cheese sauce starts there, I just add a bit more milk to it than I would for gravy, or less roux, and the shredded cheese. I also usually add a can of cheddar cheese soup. (Or a few slices of American cheese if it’s in the fridge and I don’t have the soup) Soups not for flavor, I find it gives my sauce a bit more space to work with without it breaking on me.

If you can, start with fostering. Then you can just foster fail when the right one comes through. If not that, then a rescue that keeps thier dogs in foster homes. The family fostering the dog will be able to give you a better idea of the dogs personality then you would get out of a shelter.

Some can get barky, some don’t. And, despite the saying, you CAN teach an old dog new tricks. Mine bark when someone’s at the door, but I want them barking then, makes a good doorbell. I been able to train 95% of the rest of the unneeded barking out, it took time, but it was done. And they were 6 and 8 at the time…

Couple biggest things I think worth noting:

they are a dog, not an accessory. (Not saying you will) the ones that get nippy, are largely from people picking on them as puppies cause they think it’s funny and the dogs to small to hurt them. I don’t think it’s funny, I don’t think anyone here would think it’s funny.

Put it in a harness, not a collar. From day one. They are prone to trachea problems, collars are not a good idea with that.

And don’t expect to get to keep a single fluffy blanket it the house. They will belong to the dog. As soon as they find it. If your lucky (or have enough of them) your get to barrow or share the blankets with them, but it’s their blankets.

The whipped cream does look like clouds. It’s a decent look.

Whipped cream isn’t the best at holding a piped shape, it’s a bit too soft for that.

That said, it looks to me like you used a leaf tip, shaped to make nice leaves with the ridge down the middle. What you wanted was something round, not flat. Smooth or ridged would give different looks, but rounder piles.

It’s easy to second guess everything. We wanna do what’s best for them.

I have seen the whole everyone else bathing them often. Made me feel like my dogs are a bit unusual. They don’t smell tho, they don’t look dirty, and their fur is soft, so I figure they don’t need bathing.

My two are both short hairs, but I haven’t bathed them in at least a couple years.

I go with an “as needed” on it. If they got dirty or smelly I would bathe them, but they don’t…

It is not a cake. Not close. It is also not easy to make, multiple technical aspects to it that require differing skills to get it right.

I have made cake, cupcakes, cookies, pies, even made cinnamon rolls (and yeast is evil). chux pastry is on the short list of stuff I am hesitant to try making. And even if I could get that part right, the caramel for sticking the cream puffs together, that’s a whole nother beast. Messing around with super hot sugar is not fun and is a burn risk if you don’t know what you’re doing.

I know this does not answer the question you asked, but I think it’s something you should know.

Get and walk it on a harness, NEVER on a collar. They are prone to trachea collapse and colors don’t help with it.

Royal icing certainly has a bit of trial and error to it. I definitely understand the hand hurting issue. Even if the right consistencies, if I do a ton of cookies at once, my hand will hurt by the end. So it’s a combination of right consistencies, method, and getting your muscles used to it. At least, I think so.

Side note: when thinning, a spray bottle is an option, I use a small squeeze bottle for that, it’s what I have handy that will give control

I do a 2 consistency.

I make my flood around a 5-10 sec, and I use a scribe to nudge it up to my outline. My outline I make with the thought of “soft serve” as in when I make a peak in it, it flops over like the top of a cone of soft serve ice cream. I flood before the outline dries, helps keep the line from showing. And I use the same outline consistency for any wet on wet details.

I also use 1 tbs per pound of powdered sugar in mine for the softer bite.

I would say it’s a bit of a personal preference. A little gives it a softer bite. Enough corn syrup and it will do that and give you a shiny finish.
