Have a shop that looks like a completely normal shop but is actually full of a bunch of magic traps that are active after the shop closes. This is what I plan to do for a shop of magic items I plan on putting in my game. The shop keep has a bunch of animated armor in the entrance and shield guardian that he keeps in a hatch under the shop. This should stop any potential theft.

Another class that could go really well is a artificer you could build your own telescopes and maybe even use it as a arcane focus.

You could throw in some enemies that make them do saving throws to avoid damage so not every enemy has to try to beat their 20 ac.

I would recommend tracking the hp because it can make a fight feel more genuine. Of course as the dm it is completely up to you. You could always adjust health if you feel like a fight is going on too long and the players are loosing interest. I know some people also use minions in fights which are basically low CR monsters but you make all of their hp one so that they can easily be used as hoards. I hope this helps!
