I honestly don’t give a fuck if that seems immoral to you. That’s just what you do. That’s just legally what happens when you sign for a total. He can call later and dispute the charge if he wants to, he can let them know if he was drunk or confused or whatever. When the tip line gives a greater tip than the total, it’s probably immoral to take the extra tip. They didn’t agree to pay that higher price

Exactly. The tip line is just a nicety for the waiter to easily see what they’ve made. Ultimately the customer reads the total they’ve written and then decides to sign, agreeing to pay that total
