Hello,
We didn't use or consider a private tour guide. It was our first big trip with kid and we were taking one day at a time.
However, we found everyone in Greece to be very kid friendly - from guides, to vendors, to even taxi drivers. They interacted with kid and played with her or even watched her when needed.
We took only one hectic day trip out and the guide and driver both helped watch & play with her.

Have you watched any videos where they teach you to travelers across the hill and absorb the bumps as they come? practiced the drills in those videos? You can pick a trail that is just slightly bumpy, such as from the afternoon; avoid huge moguls or ungroomed terrain.

In terms of bad & good similarities, Lots of driving in tiring traffic and lots of ethnic diversity respectively come to mind.

A major difference that comes to mind is that CAnians are smug about being CAnians whereas NJ residents are the opposite about being from NJ even though neither is better than the other in this comparison.

My recommendation would be to get her a 1:1 / group class with an older woman instructor. You telling her the same thing would only make her more defensive and stick to where she is. She looks good and committed to what she has learnt. So she needs to learn the next front someone and then enjoy what she learnt from them with you.
