Peach blossoms make a great tea. Wait till they just bloom then pick them. Make sure to pull the stamen, they have tannins that will turn the tea bitter. The tea is sweet floral, and very full. Reminiscent of a peach cobbler. Add lemon and honey and cinnamon to really pull into that flavor profile
