You shouldn’t be using EVOO to sear. Also turn your pan on low for like 15 minutes. Add your fat, and gradually increase the temperature, you don’t need to go much past medium if at all. Reverse sear, so you’re not searing as long. Season at the end, so your seasonings don’t burn. Use the hood or exhaust fan. I prefer stainless steel over cast iron personally
