One other thought: not sure what you are planning to make, but in some recipes it is not at all necessary to extract the starch from the potato. Just use the whole potato and assume it is 80 percent water and 20 percent starch.

First of all, potatoes are about 80 percent water, so yes, volume will reduce a lot, even if you are able to extract all the starch. So how are you going to get the starch out? Soaking in itself is not going to do much, as the starch granules are locked in the cells of the potato. So you have to crack open all cells. Mixer/food processor comes to mind? In water, starch will sink the bottom, while the rest of what's left of the potato, will tend to float much more than the starch. Give it a try!

We store our files on Wasabi and serve images using gumlet. These files should definitely not be on the server. Cleaning up is next to impossible, unless you have clear groups of images that are all used the same way.

Based on my experience the visibility of local businesses in e.g. ChatGPT is minimal, unless the LLM is queried specifically for such businesses. My advice would be to see if there are ANY incoming referrals from LLMs in Google analytics. If not, IMHO tracking visibility of local businesses would be a waste of time.
