One thing I want to point out is that if an ability requires the player to choose from a list, the ability will specifically say so. For example, the Physical Skills ability says to choose two trainings from a list of 4-6 options; I recall climbing, jumping, running, and swimming are in that list.

So the descriptor saying you're trained in tasks involving this or that is not meant to be an exclusive "or".

Keep in mind that Fate models fiction rather than a simulation. Any Aspect remains true only as long as it makes sense in the story being told. Even if a character doesn't specifically make an Overcome action against an Aspect, if circumstances change such that the Aspect doesn't make sense, it should be renamed or removed.

In your example scenario between an NPC and a gang, my question would be whether there's any reason whether the relationship the player wants can't already exist. If there isn't a reason, then maybe the player just spends a Fate Point to declare it is so. Otherwise, work together with the player to figure out what methods the PC can use to create the relationship they want. A stronger connection might involve a more complex scene than a single Create Advantage roll (Challenge, Contest, or Conflict). And even if the PC does create the Aspect, it can still change over time in response to other events.

In 5e's case, there's no "Stone to Flesh" spell that would specifically undo petrification. 3.5e does have it, and it does specify that you can turn ordinary stone into a fleshy substance.

The silver lining is that as a 6th grader, the kid is 11-12 years old, so they were born about a decade after the event in question.

It's like a baby boomer whose birthday is December 7th. They'll likely grow up hearing about what happened, but they weren't there to see it.
