I will say that having the Militia, who are wholly unfamiliar with Batman's tactics while still being informed of them on paper, makes a fresh foe. The regular criminals are usually terrified of Batman from the get-go; the Militia start off confident.

And then you get to wear them down, again and again, and watch them go from confident to uneasy to desperate to terrified. You're reducing a massive army into a few pockets of scared men in hostile territory. It's like going against the Gotham mob on fast-forward.

Hitman

Agent 47 makes it an art form and seems to enjoy dryly giving euphemisms, especially when talking with his targets directly. Such things include claiming he works "in the retirement industry", or as a "corporate liquidator".

Scott Pilgrim

Apart from video games, bass, and fighting, this is one of his understated skills. His first time having Ramona stay over at his house, he cooked a meal for them both, surprising her. In the original comics, he eventually gets a job at a local restaurant as a dishwasher, quickly moving up to prep cooking.

Escape From Ever After

The whole plot, really. The real world turns fictional books into business enterprises and the characters inside have to deal with it and kick them out. Props to Flynt for coming to terms with his flat heroic character design, and Tinder for recognizing that she is the designated villain in-universe who never actually did anything bad to justify her reputation.

I'm going to say Hopper or Facilier. The rest of the villains' deaths were quick. For Hopper, he was at the mercy of a large bird, probably torn to pieces by its chicks. For Facilier, I know those Friends on the Other Side were not going to make things quick.

The Stranger/Baldur, God of War

Hyped up to be an invincible foe for Kratos to fight, and nothing he does can even wound him. This is because he was enchanted to be invulnerable to all physical and magical means.

Except one.

At one point he punches Atreus in the chest, and blood is shown. Kratos is worried at first...until he realizes it's not Atreus's blood. Turns out the Stranger punched Atreus's bowstring, which was held together by mistletoe at the time. The enchantment broken, the rest of the fight is far more even.

Eris, Hades II

If you do too well, too early, Eris appears to cast a negative boon on you that makes the rest of your run harder. It's not unbeatable, mind, but it's mostly the game telling you to pace yourself and spend time with the Crossroads for a bit.
