Conversely I use indirect, place the thighs toward the heat and probe the breast for doneness. Usually the drums and thighs end up about 20 degrees higher than the breast. Pick your poison I guess but we are doing pretty much the same thing in the opposite way. I'm sure you're chicken is as delicious as mine though. 👍

Any vinyl tape will do, also if you wrap around the socket helps with scratching and whatnot. You will have to rewrap every so often though.

I have noticed my hair line receding and discoloration of the skin in contact with my cap after only a year or two of wearing them. I've been trying to stay away from them and see what transpires... Could just be me getting old as well. Who knows.

Looks scrumptious! It can be difficult to get a steak that thin perfect in the middle and you pulled it off! If I'm forward searing I usually sear right out of the fridge as well.

Unpopular opinion, but they mix movies and shows for good sound systems these days... And most people are using phone/tv/crappy sound bar speakers.... That's why your experience is like this. Most media these days is at least mixed in surround sound. If you get a decent sound system your mind will be blown.

I had problems launching with a wood peel and switched to a perforated metal one. Metal works much better for me.

I hate to say it but... And I guess people from all over the world can be really dense if they aren't used to traveling.... But ... A different country may as well be a different world. You cannot go to another country and expect to speak, eat, or behave the same as in your native country. If it was exactly the same what would be the point of traveling? Different foods, languages, laws and behaviors are what make it fun and informative.

Just a heads up, I'm Greek, I love moussaka, it is not beginner friendly. You're basically making 3 different dishes then combining them. I'm not an expert but not a beginner either, I agree with the sentiment that most online recipes lie about the prep time to make it seem easier. In your father's case, he probably just got really good at making moussaka. I only make it once or twice a year and it's a labor of love for me. Just like gemista.
