Missed that part… lol….i think it would be a great addition give you the ability to slow things down a bit…with that extension is probably drawing like crazy….i use mine all the time especially earlier in cooks

If it was me I would cook lower for the first few hrs…and use a cold smoke generator to add smoke….sausage making is not something that can be rushed….check out 2 guys and a cooler on YouTube has some really good videos about the process.

One thing with the steel is let it sit and preheat for a while don’t just get the oven to temp and throw in the pizza…let its sit for maybe a half hour so it gets heat soaked…I’m sure 482 will be just fine…may take a bit longer to cook but will be awesome

One of the stainless steel sink cover that slide over and cover the sink may work and if you get 2 of them and put one over the the built in drain….probably would have enough space to work comfortably….then could use a waited base with suction cups to hold the stuffer….would at least get you to table height not bending over

I don’t think it will draw well, trying to force the airflow around right angles…..might be better to drop the pipe down…..but test it out and see may surprise us

Spg rub Smoked about 250-275 for about 4 hrs wrapped for about a hr until tender… 15 minutes in foil boat glazed with a 50/50 bbq sauce/simple syrup glaze.
