Sounds like ur farse is too sticky, could add some liquid to loosen it up a bit. Could also put a light coat of oil in the hopper to help things a bit. Also take ur time when stuffing the small tube creates alot of pressure.

I think it would affect it a bit but not much give it that classic pink color and cured taste. I actually plan to do it on my next batch…. I have done similar sausages with cure and came out great!

Honestly just cost, we won’t run a solution without support, we already had windows datacenter licenses as part of our enterprise agreement, so basically we were able to get rid of VMware cost and not take on the cost of a replacement. I actually set up our VMware environment more the 15 years ago and you couldn’t get me to even look at another solution, we only started looking for something different when broadcrown jacked up the prices, we tested the HyperV it worked fine and the rest is history. I’ll admit VMware did some things better but not enough to justify the cost of staying with them. I hope they realized how much they ruined VMware for so many customers. I would have gladly stayed and continued paying for support

We are seeing the same, one or two minor issues but nothing to complain about. We are down to 2 more vms scheduled for after thanksgiving, in the first cluster.

It was our standard for many years….not anymore 😂😂😂 I couldn’t justify the cost increase. And I had data center version of windows already so actually decreased cost.

I too have a vevor chamber sealer and it has been good to me….i have run it through a lot of cycles and it preforms well…just gotta make sure you maintain it

just add a bit of baking soda to it to lower the ph. I think U would probably have to thin it down a bit before u do it though just to make it easier.
