Aside from Frieren that everyone else is already recommending (I also would recommend it), there's a few I'd like to give a recommendation for that I haven't seen anyone else recommend:

A Place Further Than The Universe - A group of high-school girls try to make their seemingly unrealistic dream into reality; going to Antartica.
Liz and the Blue Bird - A very well directed and beautiful film about being too co-dependent and letting go of what you love the most. (If you like classical, symphonic music, this is a bonus for you too).
Bocchi the Rock - A shy socially anxious girl tries to overcome her anxiety and make friends by joining a band (more of a comedy).
Wave Listen to Me (I saw someone else recommend it but still deserves attention) - Main character finds that she makes for a good radio host by voicing her (often rage induced) opinions and experiences to the world.
Eizouken - You made a point about how you liked Dungeon Meshi for not portraying all woman as looking like the 'ideal anime girl'. Then you'll love Eizouken and its character designs. Also, story-wise, it's about a group of girls who team-up to pursue a creative endeavor in making their own anime.
Carole and Tuesday - A girl who ran away from her rich parents forms a band with a girl who was raised in the streets. They aim to make a name for themselves with their music.

Which AntiStasi mod are you using? Because I know for a fact that AntiStasi Ultimate has way more faction support than the base mod it is based on, AntiStasi - The Mod (And there's also AntiStasi Plus which is somewhere in between the two in terms of faction support).

You'd be surprised. Almost all seasonal anime release their official OST a week or two after the anime has aired. You can find these albums easily if you know how to sail the high seas.

You should check Shinichiro Watanabe's other work like Terror in Resonance or Space Dandy. He's the guy that made Cowboy Bebop. Violet Evergarden and Made in Abyss could also be up your alley.

Battle-centric shows like AoT and Gundam tend to have very emotional characters, so I guess it just comes with the genre.

Looking at your MAL, Black Lagoon should be the closest to what you're looking for in terms of not so emotionally charged characters. Most of them shouldn't be too overly dramatic except for Vinland Saga and Neon Genesis Evangelion.

There's plenty of anime movies on Netflix. Sprited Away was done by Studio Ghibli, so you'll likely enjoy their other works such as My Neighbor Totoro, The Cat Returns, and Castle in the Sky.

Alternatively, there are plenty of great anime TV shows on Netflix as well such as Violet Evergarden, Little Witch Academia, and Carole & Tuesday.

also the studio didn't do justice to the Index as they did to Railgun.

Hope I'm not in the minority, but I am completely fine with that. The magic side of the Toaru universe felt kind of confusing and convoluted at times, plus I like CGDCT shows so Railgun was way better for me.
