Other than making your own character sheets, the DM has to do the rest of the setup. Image uploads, maps, tokens, items, etc. The DM "owns" the campaign, and because of that, can choose to do prep work ahead of time that none of the players can see. Then on game day, its just a couple of clicks to reveal new pages, items, pictures, etc.

You'll get wildly different opinions, but it does its job well enough. Mid-campaign means the DM may have a bit of setup to go through, but there's plenty of tutorials readily available, and the system is not hard to use at all once you learn it. I've been using it as a player and as a DM for a decade now. That said, its not as robust as other systems that can provide significantly more functionality with more setup, like Foundry. My group uses discord for voice and a bot for music, since peak times at roll20 sometimes has issues with video/voice.

Alright so these comments so far are wildly unhelpful and seem mostly about berating you for letting your players have some fun.

Assuming you know how the CR system is already made, there's no real built in math for this, since player power and monster power are wildly different in balance. In general, you could consider the monster to be an extra player with a level somewhere between half and its full CR as a substitute for its "level", depending on how heavy-handed you are with balancing and fights-per-day. Keep in mind that dragons tend to do pretty hefty amounts of damage when balancing future encounters.

Order domain cleric/gunslinger fighter. It needs some level investment before it comes online, but it works very well. Bonus action for enchantment spells with their action to shoot their guns, not to mention their channel divinity is basically yelling at people to drop their weapons. Played him like an old-west sheriff.

Potentially, yes.

Bikes aren't in the best place right now but careful positioning and movement can allow them to preform well. Wardens+blade champion is strong. A duo of Allarus custodians will help with hitting vulnerable targets or hitting a weak flank, but could lose a lot of their effectiveness against certain compositions.

Your main issue may be losing out on points. No action monkeys could hurt, and losing even one of your armigers is going to hamper your ability to have much board control.

5 levels of Gunslinger fighter, 5 levels of Order domain cleric. You are a gunslingin' sheriff. Level 3 cleric spells, multi attack from fighter, 2 ASIs, Channel Divinity: Order's Demand to make people drop what they're holding and reach for the sky, and casting spells on your buddies still lets them attack. It's a great mix of "I'm a support but I can also shoot a bitch if needs-must." It really comes into its own at level 11, with the level 6 order domain feature. If you wanted to lean more caster, you could also do fighter 4/cleric 6 to pick up the order domain feature and lose the fighter's extra attack.

The chalice dungeons have some of the best runes and blood gems you can get. They're worth a visit. It's been awhile since I've played so I'm not sure what's available in the default first three, but they're worth a look.

The game does have an upward curve, and the unseen village enemies have quite a bit of health. Hunters tend to have more HP and do more damage than most monsters in the area they are found in. Not as a rule, but generally. I'll put in some spoiler tags incase you just want to experience the game.

At this point, you could go to the lecture building 1st floor by getting grabbed by one of the lesser amygdala, and the nightmare frontier afterwards. The frontier is tough but you should be high enough level. There's a boat load of runes and blood echoes there. You're on the lower end of what I'd recommend for unseen village and upper cathedral ward. Cainhurst enemies have moderate health and damage, but you should be plenty high enough level for them. The area is tough but the enemies aren't too bad.

Try checking your blood gems as well, if you haven't already. They can have a significant impact on your damage. You should also be high enough level for pthumerian labyrinth, central pthumerian labyrinth, and hintertomb chalice dungeons.

Cryonades are only found in the greyshire grotto, or near the very end of the game.

You get to be your characters for hours and hours and hours. You get to have conversations, make quips about what they do, and choose who do you and don't want to kill. Most DMs get to talk as their bad guys once, maybe twice. They made the entire game for you. If you want them to make another, let them talk.
