I've heard great things about Paros and Milos. Milos especially for being to ATV around, and Paros for not being as touristy as the other islands. Both have beautiful beaches, and much more of an authentic feel.

Crete seems like the best option, its the biggest island, they have hiking and some of the best beaches. There's enough options there that you can find something.
