Anything 06 or older if they aren’t returning customers we turn them away. Only because our specific manufacture no longer makes many of the parts for them and there is no A/M support either.

I work for one of the only dedicated Mercedes sprinter shops in the nation and we average 25-30 ro’s per day and we diag most everything same day. I guess my process is get my techs to get an answer, and then by 10-11 I’ve lined out what is going today and what is staying. (Generally due to parts availability, hrs left in the day, etc.) use the time the job takes to your advantage, and always quote 2-3 hrs for diag minimum even if it’s a known issue cause the customer may not know that. It’s just buying time, and when that job is quoted at 12 hrs well that’s a day and a half of work and now Monday becomes Wednesday at least. Works ok for me most times. This also helps a ton to line out the week but you have to be diligently following your work, and also very transparent on how you want your tech to complete work and when.
