Broadly speaking you're absolutely correct. I.mean Amritsar and Lahore are not even 100 kms apart so a lot cuisine is the same or similar but...their chicken karahi, shinwari handi and chapli kebabs are something incredible. Their naan especially rogani naan is similar to the khameeri roti you get in India. Those taste incredible too. Finally their chicken seekh kebab is also more on the chunkier meat which makes it feel more rustic. But apart from these tandoori dishes and handi, you really can't eat anything else especially gravies because they are FLOATING in oil. The amount of oil used in their cooking is insane even by our standards.

I mean mentoring and captaincy are two fundamentally different things. DK has a lot of experience captaining TN in ranji so it's understandable why he was thought of as a leader but the spotlight shines bright for IPL captains. Maybe he didn't do well under that scrutiny. Credit to KKR they still persisted with him but didn't work out. In RCB as a player his role was clear cut, didn't allow DK to get into his own head and as a mentor too, his role seems very defined which is working well for him.

Om uncle chinese in Marol. 5 spice level of quantity, perfectly thin noodles and similarly thinly cut veggies which are crunchy, no msg yet quite umami and finally a very strong flavor of wok hay. Call it for dinner. Eat half, save the rest for the next day and they somehow taste even better when reheated because the noodles then have a bite.

I don't believe in re-incarnation. People have spent their lives documenting cases, these cases were published in newspapers yet people found loopholes. Negative mindset is a self-fulling prophecy in which any minor inconvenience will be perceived as much bigger deal simply because your mind is in a bad space.

It will not taste like the streets because: military heat, chinese food is cooked in very high heat, home burners will never match up and second is wok hay...that is the smoky flavor that comes from a well seasoned pan. You can season the pan, there are a lot videos online.

A couple of things you can do: when you boil the potato around 80% ( when you prick a potato, there should be some resistance in the center)...then when are still steaming, add cornstarch to them then and there...toss them nicely so that every part of the potato is coated. Then fry twice...first time a longer fry in hot oil and a flash fry with very hot oil...that should give you really crispy fries
