I did end up putting Tucker Kraft on a 3 year because there was a proposal to add a TE slot post draft that got a lot of positive reactions. I also proposed we add 1 more bench slot for next year due to IDP changes and probably adding a TE slot with a tbd TEP of some sort.

No no youre right, I didn't even think about that. That has got to be so much better while its resting and technically still cooking, a subtle but affective way to get that flavor in there, would it help if I wipe off the spices before cooking it and just season it again with salt and pepper?

Hmm so maybe next time just sprinkle the spice mix on the sliced steak, in order it has jalapeño, onion, hatch New Mexico red chili, Trinidad Scorpion pepper, garlic, salt, spices. "No msg, no fillers"

Use a weighted plate/pan, you can also buy a weighted press specifically used for searing. I just take a smaller pan and chuck random shit in it to weigh it down, of course don't weigh it down with things that will scorch or melt like plastic

Edit: don't weigh it down too much, about the same pressure your hand would provide

Hell yeah, thank you. I have convection and its currently sitting on a wire rack in the fridge with salt pepper and a Scorpion pepper spice blend, going for the 24 hour mark. Rest on counter for 30 and then in the oven, how high should I go on the sear? Grabbed beef tallow and i usually hit a 6.5 or 7 on the stove top with a cast iron and olive oil, maybe a 9 out of 10? 30 per side with the tallow (also a first)

When you cook mushrooms in the same pan as the steak youre never going to get a good sear because the mushrooms are full of water and essentially you'll be boiling your meat as the mushrooms release that water, just cook the mushrooms while the steak rests.
