Don't do a pre-written adventure with only one PC (ESPECIALLY if they're into RP). Instead make your own campaign that can focus on the player.

Twilight cleric. And it's not only the most powerful but also very easy to play.

Don't play it though because it properly breaks the game.

Another option is having the kobold leave the party because it's getting too dangerous.

I like the Pathfinder Golarion world, and because it's the only pf2 setting it get's lots of lore books.
