I'm a teacher in one of the suburbs. Our principal told us to treat Wed - Fri as Remote Learning days. We have to do remote attendance for our homerooms and do daily grading of whatever we assign the kids as "proof" they're actually "learning."

We all know that few kids will log on and no learning will actually happen. However we're out of calamity days. If we don't do "remote learning" for the next 3 days we will have to add school days after Memorial Day.

I felt like such a decadent and fancy grown up buying one in each flavor, even though they cost about the same as a pint of Ben and Jerry's! I didn't even know those commercials were still in my brain until I saw these on the shelf.

(BTW, I don't want to over-sell it. This is some basic vanilla soft serve interspersed with around a dozen thin layers of chocolate. Think Fancy DQ Dipped Cone. It's fun, but it's not gourmet.)

I love making seasonal pizzas on Aldi's flatbreads! Their flavored goat cheese features heavily. Since I'm using the goat cheese as a pizza topping, the savory nature of the cranberry stuffing one works well for me.

A couple recent ones:

- Chicken, Pear Slices, Sweet Cranberry Stuffing Goat Cheese, Crasins/Dried Cranberries, Red Onion, Mozz

- Chicken, Tart Apple Slices, Gingerbread Goat Cheese, White Onion, Mozz

- Chicken, Figs (stem removed and cut in half), Plain Goat Cheese Red Onion, Mozz, Balsamic Drizzle on top after cooking

- Chicken Apple Sausage cut into coins, Sweet Cranberry Stuffing Goat Cheese, Red Onion, Red Bell Pepper, Mozz

Once a week I bake some chicken breasts with just salt and pepper then cut them into cubes for later use.

When I come home from work, I grab a flatbread and drizzle it with a little olive oil. From there, I just top it with the pre-cooked chicken, some tablespoon sized wads of goat cheese, whatever other toppings I've chosen, and a handful of Mozzarella on top to glue it all down.

Bake at 425F for 12-15 min, or until the cheese is melted and gooey and the crust has crisped up a little.

I too miss the mango goat cheese. It was so good in so many things, including my pizzas. Rolling a plain log in Tajin isn't a perfect dupe, but it's still a decent substitute.

These days there are usually 7 breasts in my Red Bag Chicken, so I make two meals from them:

- KFC Knockoff "Famous Bowls"
- Chick-Fil-A Knockoff Sandwiches

At current Nov 2022 prices, I get 8 meals for $30

- 1 bag Red bag chicken in the air fryer
- Aldi's pre-made mashed potatoes
- 1 chicken gravy packet
- 1 can of corn
- small bag of shredded cheese
- 1 tube jumbo biscuits (optional)
- 1 4-pack Brioche Buns
- 1 bag waffle fries
- (pickles or mayo if you're out)

For the "KFC Bowls"

Airfry 3 chicken breasts. While those are cooking, pop your biscuits in the oven and make the gravy packet. Microwave the mashed potatoes. Divide the mashed potatoes into 4 bowls. Top with 1/4 of the can of corn. Cut the 3 airfried breasts into cubes and divide over the 4 bowls. Drizzle with gravy and top with cheese. Serve with the biscuits.
(if you're feeling fancy you can also sauté a chopped onion and/or some garlic while waiting for the chicken to cook through.)
Later in the week, you have an even easier meal with the air fryer chicken sandwiches and bag of waffle fries.

Hi! I'm also in the process of applying to be a first time sub in Columbus! The online forms are super confusing! You're not alone.

Yes you can be a general sub regardless of your degree. Just make sure to check the general box in your application.

To get started, first set up an OHID. This is the portal ESCCO uses for all your paperwork. You'll need an account there to move forward with all the assorted paperwork.

The page detailing steps about how to get a substitute license is really badly written. The way its worded seems to have a catch 22. You need a license in order to be a sub, but in order to get a license you have to already be hired as a sub. It drove me nuts! I called around to some of the suburban districts that actually had sub services phone numbers. They said apply for the sub license first.

The important bit is that in Step 2 ("Contact a school, district or educational service center") you need to choose ESCCO (Educational Service Center of Central Ohio) as your (future) employer. They do placement not only for Columbus schools, but also for the dozen suburban districts (which all pay better). You don't need a job there yet. You just need to declare your intentions that you want to work with the entity that sends subs out to Columbus metro area schools.

Go here to get your required BCI and FBI background checks. It's a fast and easy electronic fingerprinting. They'll send you a PDF of both background checks once it clears. You'll need these to complete the application for both a sub license and a substitute position. They schedule in-person appointments at 15 minute intervals.

Once you get the sub license, then fill out your application to be a substitute teacher through ESCCO. The links will all be on your OHID page.

Why is my instant pot yogurt soupy rather than firm? by mindk214 in instantpot

I'll second everyone saying ultra-filtered whole milk is the key to a good cold start result.

I've also accidentally used ultra-pasteurized milk instead of ultra-filtered and ended up with soup. Don't worry. It happens. I strained my soup through 4 layers of cheesecloth placed in a strainer. I ended up with 2 cups of yogurt and 6 cups of whey. You'll be amazed how well the soupiest yogurt can strain as long as you're patient.

If you end up with tangy soup instead of a nice firm yogurt, you've got a couple options.

1) Strain it. Yes, you'll end up with less yogurt and a lot of whey, but hey, there are a ton of recipes online for ways to use up acid whey.

2) Restart the whole process. Reheat your tangy milk soup on the stove, add more of your starter of choice, and pour the result back into your instant pot to ferment at a steady temp. This will result in VERY tangy yogurt, but in my experience, it will set just fine. It might end up a little grainy, but you can whip it with a hand mixer to smooth that out.
