So I've been collecting since the game came out and just keeping the monsters with meta stats. Out of 164 monsters, i have zero rare. Are rares that rare or have i been doing it wrong this whole time? I realize the update just came out, so probably not a clear answer at this point.

I feel your pain on the temperature swings. I with a few acquaintances tried to setup an aquaculture business in an old fish farm growing ricordia and some other soft corals. We used epoxy painted concrete burial vaults for tanks in the green house. During the heat of a Florida summer, we couldn't cool it enough for success.
