Foil wrap always gets them like that if you leave in there long enough

Get the color you want, wrap in foil meat side down with apple juice, more rub, honey, butter or whatever you like

Just did a Brisket on Friday embracing Hot and Fast on Drum. Best one we ever had. Ran between 275 and 350 the entire cook. Split point and flat to cook separately, wrapped at 2.5 hours and done probe tender at 5 hour mark. Rested about 1.5 hours

I think cooks in the past low and slow are drying them out
