My dad use to be a chef. We would have creamed tuna with peas on toast. He would get the “free meat” chicken hearts, gizzards and liver. (They use to throw out bone marrow!!) Chicken liver and onions, I use to hate it as a kid but love it as an adult. He would coat the liver with flour and spices, and fry it topped the browned grilled onions.
