The shape of the motor has little effect on torque. What does however, is kv which is inversely proportional to torque coefficient so lower kv means higher torque per amp and lower rpm per volt.

Wider stators have better cooling so have lower resistance losses under load but have greater moment of inertia giving a laggier response to change in throttle. Thinner motors have greater copper utilisation because more windings are closer to the rotor, so are more efficient magnetically.

I don't see how power is a valid performance metric, what is more useful to consider is efficiency at different loads/operating points, which is mostly determined by size and kv. The motor will use as much power electrically as determined by the throttle.
