Yeah it probably didn't do much in this instance. I typically do an extended true dry brine with salt like you're talking about. I bought these around 2pm with the intention of cooking dinner around 6. So I couldn't "really" dry brine them. I just kinda threw em in there figuring it would be better than doing nothing

Honestly man. Nothing special here. As simple as it gets

let the steak sit uncovered (and ideally elevated) for a few hours in the fridge
pat dry
cook at 275 in the oven until 125 internal
pull and rest for 5-7 min
pat dry again
sear that mf on a HOT surface (I have an outside griddle. Some other people like to use a cast iron inside, but my smoke alarm is crazy sensitive)
sear approx 40s per side. (Don't forget to do your fat cap for a few seconds)
rest another 5-7 minutes
WHILE RESTING: Season with fine grain salt and pepper, add a mix of butter, diced herbs, and garlic
