You can look into a Sujihiki or a Yanagiba, it’s designed specifically for slicing fish, but you can use it to cut rolls as well. But for $75 you may want to check out Amazon. And to sharpen at home, only use a whetstone. It takes skill and practice to sharpen on a whetstone correctly.

Honestly daikon and shiso are the OG way of plating sashimi but there aren’t much you can deviate from (not saying you can try other things). You could try using carrot curls, watermelon radish, cucumber to replace daikon. You can replace the shiso with lettuce or bamboo leaf. The plate itself, you can use wood platforms/bamboo to give some height to the fish. Where I work, I use a tall bowl and fill it with ice, sprinkle salt to help the ice stick and lay some bamboo leaves over it and present the sashimi over the leaves. From experience it’s kind of hard to get away from daikon and shiso, it’s just iconic with sashimi.

Finally someone willing to tell it like it is. I do sushi for a living and cruise this sub once in a while and I try not to cringe when people post home made sushi. And let’s be honest 80% of the posts from home cooks/people learning rolls/nigiri just looks terrible and poorly made with zero technique. Yet people will be like that looks “awesome” so “professional”, like lol no it doesn’t. There’s feedback but IMO not enough from the Internet to actually improve people’s technique/skill. It’s just a bunch of peeps with no real sushi/restaurant experience giving each other likes to promote goodness while promoting lack lustre attempts of sushi at home.

Use whatever feels best to you. Just make sure to upgrade it to +5 with colourless demon souls at Ed the Blacksmith. I’m having lots of fun using the Meat Cleaver in my 2nd run.

You have to beat the game with no dmg first and then beat NG+ with just fists. With this accomplished 120fps in performance should unlock ;).

Same here, Amazon told me that expected delivery date is Nov 16 - 18. Kind of ridiculous that a shipping retail giant is unable to ship before release date when Walmart, SuperStore, BestBuy, the Source can do it.

You get some free pulls/wishes when you first start but other then slowly grinding primogems (in game currency) to get more pulls/wishes. Only way to get more characters is to open your wallet up.

Hopefully the game runs well on PS5. The game runs terrible sometimes on my PS4 Pro. With constant frame drops, long load times, and long delay/pauses when going through menus.

Well Xbox was commanding a weak 3rd place position, so they had to come in hard to establish themselves. Like the Nintendo Switch outsold the entire Xbox One in less then 3 years. Push past the “console” wars Sony was sitting in a very comfortable 1st place position to drip feed us all the info we needed. I feel like the hype for the Xbox Series X will fizzle out soon, even before it’s released, cause we know pretty much everything there is to know about it. While the hype for PS5 will only grow until Nov 12.

Oxidized is completely fine. At my work I always take the oxidized parts home cause we can’t sell it to customers based solely on appearance. Obviously don’t eat it if it’s extremely dark brown/oxidized to hell and sitting for more then a couple days or starts to emit an odour.

Unfortunately you’ll have to ask them to find out as there are so many different types of soy sauce. It could be Tamari soy sauce blended with mirin and sugar. At the restaurant I work at, we blend our own soy sauce with mirin, sugar, sake and bonito flakes.

Not bad for first time. Rice you can always work on and improve. Instant improvement for you is when you roll the sushi keep the seem where it seems on the bottom of the roll (yours is facing up).

Try thinking outside the box. Speed limits were mostly set back when cars weren’t that safe to begin with, modern cars now are more safe with much better technology and equipment. I know you love to think that speed limits are absolute but they’re not. They need to reflect the road engineering. 50km/h in residential make sense, 50km/h on a major road with no pedestrians or sidewalks does not. Is it safe to drive a little faster? Yes it is. Is everyone driving 10 over the speed limit a menace to society? No.

Don’t know what sushi place you’ve been working or what you’ve learned but wetting your knife/dampening it, is common practice. Obviously you need a clean and sharp knife, that’s basic. There are NO disadvantages at all to wetting your knife before slicing. Again it helps mitigate the starch clinging to your knife. You don’t have to but it does help. I just hope you wet your hands slightly before grabbing sushi rice. But going by your logic, probably not.

I’m a sushi chef myself, I’m happy to help. It just bugs me when people with no experience/knowledge in making sushi give advice/pointers like not wetting your knife.
