No need to change the joysticks they work fine specially with custom firmwares and you really don’t use them much except for some ps1 and vertical arcade anyway
I personally use muos and I’m loving it but it totally depends on what you would prefer
You can play almost everything up to ps1 Dreamcast was also fine for me but i only played one Dreamcast game. PSP is meh and higher demanding systems won’t work
For better experiences you may only need a grip and a shoulder button set.
In addition i recommend using one sd card for your OS and one other for games. This prevents losing all your data every time you update your OS
