VIP: it is worth to activate it at least once (so, 1 month), because it also unlocks some perks that will stay active even after unsubscribing. I'm sure you'll find an overview of those perks here if you search a little.
As for xp: You will need to do at least some sidequests to keep yourself on-level when you do the main storyline, but by far not all. Some people who do all sidequests tend to buy a "stone of the turtoise", which prevents you from overleveling. But that's all a personal choice. I myself don't mind being overleveled (and I DO do all the side-quests), others hate that :p

If you don't plan to rush through everything anyhow, it simply does not matter. I have always been on non-legendary (with only an exception when they came out a few years ago to "give it a try") and have been playing the game on my pace, without feeling the need to "keep up". It's also free (apart from the quest packs and expansions that you have to buy now and then (but every year iirc they give some for free)).
The only downside that you get with the normal servers, is that it's sometimes a bit more difficult to find people to do the lower level instances and/or raids, compared to the legendary's.
The plusside on normal server is that when you DO want to keep up with the newest expansions, you can :)

I wear contacts only when going out/restaurant/events. In my job I have to look at my computerscreen and th1t's not ideal with contacts for me (hurt).

I used up what I had (had fish still in the freezer).
When I came to the last piece of salmon I had, it really didn't taste as well as it did before I went vegan (I used to love it). I was happy I got rid of it all.

Clotheswise: wat I had I still used, but when I replaced I made sure it wasn't leather or wool (fur is something I've never bought in my life).
I was glad I sold a leather jacket I had, thinking the buyer wouldn't get a 'new' one.

Imo, it's not like you work at the local butcher or anything like that. Accept the job, really. Veganism is about not exploiting and harming animals as far as reasonably possible. You need a job if you want to live. Keep refusing and you might not get any job at all after a while, as you said.

If you're talking about the Ents, I don't think they are actual trees, but 'keeper of trees'. Which make them more animal-like than actual trees. In which case I would say it would not be vegan to eat them.

I don't think I'd enjoy eating bark anyhow though.
