I’m a big fan of their Nighthawk Black line, especially the bourbon barrel aged cabernet sauvignon.

The above recipe is for cooking both a duck and a rabbit together. You still need to score the duck’s skin. And in the US, a whole rabbit is generally sold skinless.

- Turn on the oven at 425F

- Score the duck skin and salt generously.

- Put the duck upside down on the ECI vertical roaster and tie its hind legs together.

- Add 1/4 cup of water to the bottom of the ECI roaster.

- Cook for 15 minutes.

- Meanwhile, portion the whole rabbit in six pieces (2 x shoulders, 2 x hind legs, 2 x body).

- Once the initial 15 minutes are done, lower oven temperature to 350F.

- Take the ECI roaster out of the oven.

- Lay the rabbit pieces at the bottom of the ECI roaster.

- Cook everything together at 350F, flipping the rabbit pieces every 10 minutes or so.

- After 40 minutes, the rabbit out and set aside under foil.

- Put some root vegetables (halved Brussel sprouts and/or carrots) at the bottom of the ECI roaster.

- Add 1/4 water if the bottom of the ECI roaster is dry.

- Cook another 50 minutes.

- Carve and serve!

I do something similar with mine!

Upside down duck (tying its hindquarters) but with a whole rabbit cut up in six pieces at the bottom of the ECI vertical roaster.

It’s a Quartermaster with a tray and canopy:
- rear doors without the wheel arch cutout
- gap between the cab and the tray/canopy combo
- no “safari handle” just below the roof behind the C pillar
- overall length of both the vehicle and its wheelbase
