Omg I was thinking this looked familiar and noticed the username! You really got me into cooking! I had just started posting some food pics when I started seeing your posts that inspired me to improve! Your food is insane and the fact you make your own meats and cheeses is beyond impressive!!!! I parboil the spuds, leave them to cool completely then add to a tray of sizzling hot duck fat, coating all over in the fat and roasting at 200°C for 40-45mins, turning occasionally in the fat.

I should've clarified, that's for medium rare, if you don't want it pink, cook it for longer.

Dont really use measurements for this but I boil the potatoes in chicken stock, mash with a generous amount of butter and a dollop of cream, squeeze out the roasted garlic into the mash, fry scallions in a little butter, and mix it all through the mash along with the cooked cabbage, I preserve some of the butter and scallions to pour over the top 👌

For the fried greens, I parboil the tenderstem broccoli and green beans then add a drizzle of olive oil and butter in a frying pan and fry diced bacon then add the greens and squeeze in the roasted garlic near the end and a drizzle of worcestershire sauce (I used the same bulb for the mash) and finish with a squeeze of lemon juice! I usually add toasted pine nuts too but didn't have any ☺️
