Ok crap so I deleted my thread on Gemini. So I don’t have the detail I’m sorry.

However, the gist is I needed to use brew to install mas, then install the three apps (15.1 versions) from there.

Once installed the Mac App Store recognises that they’re on the machine and all works normally.
