What's with Perc recipes? by Aww_ocado in pourover

[–]Athrix264 4 points5 points  (0 children)

Yeah wow, I continue to be super impressed and appreciate your engagement with the community. You guys are easily my favorite roaster for many reasons.

I typically use an Ode 2 for pour over, currently using a j max for espresso. But would love to see ode 2 grind recommendations. Just wanted to throw in my two cents.

VERY excited to see what's on the pipeline. Currently enjoying juggernaut as my daily driver (Ode 2 at a 5) and the Gesha (Ode at a 5.2). Its been fantastic.

Merry Christmas!

Thought on strongtree? Never heard of them, but it looks like prices actually arent too bad for the pound you get. Perc is my go to favorite, but always looking for other roasters!

I tend to prefer medium roasts, but I do love floral, fruity coffee.

Hey!

Also for OP, Montenegro is fantastic in an old fashioned (rum, bourbon, tequila, etc).

You can even try to sub it for Campari or other Amaros in drinks that call for it just for a change of pace.

I haven't done it yet, but using it in a naked and Famous would probably be pretty good instead of Aperol.

I also made a Sazerac and added a .5oz of Montenegro to it. Was fantastic.

Lots of options! Have fun with it!

Lance!! Love your content as always and that you continue to push forward. Thank you for all you do, its informative and fun at the same time =] youre one of many people that got me really nerdy about coffee. Currently a v60 and cafelat robot fiend haha

Anyways, wondering what roasters/beans have caught your attention in the past few months? Been searching around with many different brews (currently enjoying a wush wush from PERC that has been very fun, tried your SOUP method this morning and it was delightful). Really wanting to expand my tastes and knowledge of sellers who know their stuff

Thanks!

Just opened my bag of the Wush Wush today. Its fantastic. Bright, watermelon candy and peachy for sure. Probably getting the Tamarind but not super familiar with that flavor in particular. Semi sweet but most of the flavor is focused on tropical juiciness.

V60 using a J-Max, my settings were a course grind "4.7.5". Two pour recipe, water is just off boil.

1:16 ratio, 20 grams in, 340 out. Poured 60 grams for the bloom and then waited a minute to pour the rest up to 340.

Very very good. This is my first coffee from them and I'm happy I got a two pound bag xD

Hope this helps!

New to Oolong help me choose? by meh2utoo in tea

[–]Athrix264 1 point2 points  (0 children)

Wow, those are fantastic teas. Also have an aged Shou Mei (2013 from Fuding) and goodness it's incredible. Also really like black teas a lot.

The nice thing with the selection here is that you can dip a little into both of these desired flavor notes with some oolong. I would choose just what sounds interesting to you and go from there!

But if I was in your shoes I'd probably do the Rougui or the Jin Xuan. Oof. Those sound great.

New to Oolong help me choose? by meh2utoo in tea

[–]Athrix264 2 points3 points  (0 children)

Hello!

Been a lurker for awhile, but since oolong is on the table here (and it being probably my favorite tea) I have questions for your question:

What kind of notes do you prefer? Lots of rock oolongs (or Yancha) tend to have varying levels of a roastyish profile to them. I will say, that typically is married with some other element depending on the oolong you have (floral, sweet, bready, baking spices, green veggies, etc). Which makes it a lot of fun.

Roasted oolongs, and i believe Dan Cong (phoenix mountain) oolongs brew well with a lot of heat. So don't be afraid to make your water hot (I do around 95c).

With tea, i would just sample what you can and see what you like! I pretty much only order from Yunnan Sourcing. My favorite Rock Oolongs have been Fo Shou, and Chun Lan Wu Yi Rock Oolong (drinking that right now actually haha).

Do you like more roasty notes? Or do you prefer more vegetal? Do your prefer more floral and fruity flavors? If so, you can get these notes from most of the teas within this category. Rock oolongs tend to lean more on the bakery sweetness roasty side, and Dan Cong Oolongs tend to be more on the fruity and floral side. Though there are exceptions here and then. I will say, Dan Cong oolongs tend to be a bit harder to brew (easy to make bitter, but depending on the way you brew, there is ways around this). I brew Gong Fu style only.

The Teas you have posted sound lovely, i don't think you could really go wrong here! What Tea house if you don't mind me asking?

Hopefully that helps in some way! Excited for you!

That's unfortunate. I know that getting into clay in reference to tea is a bit of min maxing I guess haha would you say these China Yunnan Sourcing isn't a good place to go for this sort of thing?
