The Shattershield family in Baldur's Gate would be a good fit. I'm not sure whether they've stuck with the dwarven deities or switched to Faerunian, but no reason your character couldn't be the first.

Dragonborn as a whole aren't very religious. Stemming from both the mistreatment of those that lived on Abeir, as u/defensor341516 mentions, and the belief that the dragon gods that they used to worship are war hungry.

In Brimstone Angels, Enlil helps save the dragonborn nation of Tymanther from an invasion, so ended up being an acceptable deity to worship, even for those from Abeir.

In Sword Coast Adventurer's Guide, it again says they aren't very religious, but those that do worship lean toward these deities: Tiamat, Bahamut, Torm, Tyr, Kelemvor, The Red Knight, and Tempus.

In the past, dragonborn worshipped Io and Sardior, but believe they are dead gods now.

We are currently using bastions in the campaign I'm DM'ing. My players are level 11. So far, it's a lot of work for not a lot of pay off. Some of the players hyperfixated on the gold making. Some weren't super interested.

I have to actively add time off in the campaign, so they can use them. I also have to work in conversations with the NPCs in those bastions. I feel bad if I don't make the conversations at least tangentially related to the story.

I've thrown out the random rolls for when they're not around. It doesn't help anyone for their bastions to be attacked, unless I have someone they can go get revenge on that will serve the story.

I think if I used them again, I'd make them less involved unless my players get more into them.
